Baked Brie Wreath

Honey-glazed melted brie, plus herby crispy pizza dough, is an equation for true happiness. Your friends, family, or colleagues will be ready to dive into this edible wreath once you stroll through the door… after all, you want to eat the cheese while it’s warm and gooey.

Ingredients

  • 2 lb. homemade or store-bought pizza dough 
  • Neutral oil, for greasing
  • 1 (8-oz.) wheel brie
  • 1/2 c. (1 stick) unsalted butter
  • 2 tbsp. finely chopped fresh flat-leaf parsley
  • 1 tbsp. finely chopped fresh rosemary 
  • 1 tbsp. fresh thyme leaves
  • 1 1/2 tsp. finely grated lemon zest
  • 1/2 tsp. crushed red pepper flakes
  • 1/2 tsp. kosher salt 
  • 2 tbsp. honey 
  • 1 1/2 tsp. fresh lemon juice

Directions

  1. Step 1Place pizza dough in a large oiled bowl, cover with plastic wrap or a kitchen towel, and let rise at room temperature until doubled in size, 1 to 2 hours.
  2. Step 2Arrange a rack in center of oven; preheat to 400°. Line a large sheet pan or pizza pan with parchment. Place brie in center of pan.
  3. Step 3In small pot over medium heat, melt butter. Pour half of butter into small bowl and stir in parsley, rosemary, thyme, lemon zest, red pepper flakes, and salt. 
  4. Step 4Divide dough into 1-oz. portions. Using the weight of your palm, roll each piece of dough on a dry surface until a smooth ball forms. Arrange balls in 2 rings around brie; the first ring should have about 13 dough balls, and the second ring should have about 19. Brush dough with plain melted butter.
  5. Step 5Bake wreath until dough balls are puffy and golden brown, 30 to 35 minutes. Brush with herb butter.
  6. Step 6In a small bowl, combine honey and lemon juice. Pour over brie.
