Doritos Casserole

Talk about a dinner the kids will love! This Doritos Casserole is basically like a nacho casserole with Doritos instead of tortilla chips. Store-bought shortcuts like canned green chiles, fire-roasted tomatoes, and cream of chicken soup make this hearty supper come together in a flash. If you have picky eaters at your table, this is a ground beef casserole you have to make.

Ingredients

  • 2 Tbsp. vegetable oil

  • 1 medium yellow onion, finely chopped

  • 2 cloves garlic, thinly sliced

  • 1 lb. ground beef

  • 1 (1-oz.) pkg. taco seasoning

  • 1 (14.5-oz.) can diced fire-roasted tomatoes

  • 1 (4.25-oz.) can chopped green chiles

  • 1 (15-oz.) can cream of chicken soup

  • 1 (9.25-oz.) bag Doritos Nacho Cheese-Flavored Tortilla Chips

  • 1 1/3 cups shredded Cheddar cheese, divided

  • Fresh cilantro to garnish (optional)

  1. Cook onion and garlic:

    Heat vegetable oil in a large skillet over medium-high. Add onion and sauté until softened and translucent, about 6 minutes.

    Add garlic and cook for 1 minute.

  2. Cook beef mixture:

    Add beef and break up with a spoon; cook until completely browned. Add taco seasoning and stir to incorporate.

    Mix in tomatoes, green chiles, and cream of chicken, and stir occasionally over medium-high until liquid thickens, about 5 minutes. Remove from heat.

  3. Break chips:

    Transfer chips from the Doritos bag to a large bowl. Use your hands to break up the chips until the pieces are small but not quite crumbs.

  4. Layer casserole:

    Preheat oven to 350°F. Pour one-third of the meat mixture in the bottom of a 9-by-13-inch baking dish. Sprinkle 1/3 cup shredded cheese over the layer of meat. Sprinkle half of the crushed Doritos evenly on top of the shredded cheese.

    Pour another third of the meat mixture on top of this Dorito layer and spread evenly over the chips. Repeat the layering process with another 1/3 cup cheese and remaining Doritos. Pour remaining meat mixture over top and spread evenly. Sprinkle remaining 2/3 cup shredded cheese on top.

  5. Bake casserole:

    Cover the baking dish with aluminum foil and bake for 30 minutes.

    Remove the aluminum foil and bake until the cheese begins to brown, about 20 minutes.

  6. Add garnishes

    Allow to cool slightly before serving with fresh cilantro to garnish.
