Halloumi fries
Ever since we tried street food van Oli Baba’s legendary halloumi fries they’ve been haunting our dreams. This is our attempt to recreate that deep-fried cheesy magic
Ingredients
- for frying oil
- 2 blocks halloumi, cut into fat chips
- 1 tsp sumac
- 1/2 tsp ras el hanout
- 100ml natural yoghurt
- 2 tbsp pomegranate molasses
- 100g pomegranate seeds
- a handful mint, chopped
Directions
- STEP 1
Heat a shallow pool of oil in a large frying pan. Thoroughly pat the halloumi dry before adding to the pan and cook, turning until golden brown on all sides.
- STEP 2
Tip into a bowl, add the sumac and toss.
- STEP 3
Mix the ras el hanout with the yogurt and season with salt.
- STEP 4
Put the fries on a platter, drizzle over the yogurt and pomegranate molasses then sprinkle with pomegranate seeds and mint. Eat immediately.
