Pulled Pork Loaded Baked Potatoes

8 medium-size russet potatoes (about 8 oz. each)

1 large yellow onion, thinly sliced

1 large red bell pepper, thinly sliced vertically

8 oz. Monterey Jack cheese, shredded (about 2 cups)

1 1/2 lbs. pulled smoked pork, warmed

2 cups corn chips (such as Fritos), coarsely crushed

2 small ripe avocados, diced

1 1/2 cups barbecue sauce

1/4 cup chopped fresh cilantro

1 (14-oz.) package coleslaw mix

Directions

Preheat oven to 400°F. Place potatoes on an aluminum foil-lined large rimmed baking sheet. Bake in preheated oven until very tender, about 45 minutes.
